Food: Spicy vegan chickpea and avocado salad in pitta

Spicy chickpea and avocado salad in pitta

Ingredients
Smashed chickpeas
Avocado
Plum tomato
Pepperdew peppers

Vegan Parmesan
Black olives
Red Onions
Sainsbury's Italian salad

Olive spread

Paprika
Cayenne pepper
Cracked black pepper

What do to....

Smash the chickpeas and avocado in a bowl.
Chop the Plum tomato, pepperdew peppers, onions and Black olives into slices and add to the chickpeas and avocado.
Add the Vegan Parmesan, 1/2 tsp of Paprika, 1/2 tsp cracked black pepper & 1/2 tsp Cayenne pepper to the mix and let it sit for 15mins.
Cut a pocket into the pitta bread and toast to preference. 
Once toasted spread the olive and humous inside the pitta and add the salad.
Spoon a few tbsp fulls of the spicy chickpea mixture into the toasted pitta pocket and ENJOY!

Food: Dairy Free Naan Pizza

Recently, I've done a lot of research on food, diet and nutrition and decided to try a vegan low soya diet. 
I could go into the reasons but I'll save that for another post.

Last week I got invited to Pizza Express and immediately got filled with dread...what would I eat? I am sure the Vegan Giardiniera is great but I am fussy and not keen on artichoke....

This gave me the idea of creating a pizza I'd like.
The original pizza base idea came from an old friend who used to make me pitta bread pizza all the time, they were soooo yummy!
I took that idea and ran to Asda to get a base for my own dairy free naan pizza which was so delicious, I thought I'd share.

Ingredients
Dairy free wholemeal Naan (I got mine in Asda)

Riya's Wholemeal Naan Bread

Tomato and basil pasta sauce
Mixed herbs
Paprika
Cayenne pepper
Red onion
Garlic
Peppers
Mushrooms
Black Olives
Courgette
Plum tomatoes
Violife dairy free mozzarella flavour (Cheese)

Method
Add the pasta sauce to a pan on a low heat and season with mixed herbs, paprika & cayenne pepper to taste.
Let the sauce cool and spread evenly on the naan bread.
Add the Violife and sprinkle the vegetables
Cook on a medium heat till the veg is cooked through and ENJOY!

Food & Drink: Oyster Sauce

My trip to Thailand last year was on of my best yet. It was so beautiful and I would love to revisit!
One of the best parts of my trip was doing an authentic Thai cooking class at Asia Scenic cooking school in ChaingMai.


One of the key ingredients in Thai cooking is Oyster Sauce.
I've never actually tried oysters, they look scary and I can't imagine the texture is something I would enjoy.
-Yes, I have mild Trypophia. No, I don't want to go into it as I might faint.



Anyway..back to food!
So, I haven't tried Oysters but love the flavour Oyster sauce brings to dishes.
In Thailand I tried broccoli in Oyster sauce....It was one of the nicest things I'd ever tasted and I made sure I wasn't leaving Thailand without a bottle of authentic oyster sauce.

And I didn't...since then I have tried oyser sauce on almost all my homemade Thai-inspired meals.

Food: Fully loaded Veg Spelt Pasta

 
Fully loaded vegetable spelt pasta!
 

If like me, you love pasta but hate the effects of all the added carbohydrates, sugars etc then this dish may be as good to you as it has been to me :-)

I am trying to eat more veggies and fewer carbs, this dish is a great way to get in as many veggies as you can with half the carbs!

Ingredients
  • Organic Whole Wheat Spelt Fusilli
  • Tomato passata
  • Fresh Basil
  • Sweet Red Pepper
  • Sweet Yellow Pepper
  • Shallots
  • Garlic
  • Courgette
  • Meat Free Style Balls (Veggie meatballs-Soya)
  • Smoked paprika
  • Black Pepper
  • Mixed herbs
  • Chili
  • Extra Virgin Olive Oil

 
First boil two small handfuls (One if you have large hands) of Tesco Organic Whole Wheat Spelt Fusilli
(£0.75 Tesco)
 

According to 'organicfacts.net'...Spelt Pasta has some great health benefits.

Next pre-heat your oven (Temperature:Fan 170°C, Gas 5, 190°C) & add your Meat free balls (£1.50 Tesco) to a foil wrapped baking tray & cook for 15mins.

The next part is the fully loaded pasta sauce!

Roughly chop all the veggies into bite size pieces and leave to one side.
Fry shallots, garlic & chili in 1tbp of olive oil till soft, then add peppers & courgettes.
Next add all the spices, add the passata and bring to the boil.

When the meat free balls are almost done, add to the sauce and it's ready.
Add & mix the sauce & balls with the pasta and ENJOY!
